Rosarios

I had the pleasure of dining at Rosarios while I was in town for the 2024 Valero Alamo Bowl game between the Colorado University Buffaloes and the Brigham Young University (BYU) Cougars. There were some locals sitting to my right and when I inquired about a good place to try that would still be open after this game this was the first place mentioned. Although we were not able to make it to Rosarios right after the game on Saturday night, we did stop by for brunch on Sunday morning. Oh man was an amazing treat it was. We had an amazing time. For those of you who are familiar with my reviews you know I am going to keep it real with you. When we first walked in, we were a little skeptical based on our interaction with the person who walked us to our table…it was a lot shaky, and we were thinking what we are getting ready to experience. However, that all changed when our server Robbie arrived. He was so full of life and the energy he brought you could not help but have an enjoyable time. He was very knowledgeable of the menu and was able to make recommendations based on any questions we asked. When you stop by ask for Robbie’s section. The decor here was modern and appropriate for the time of year. Everything looked and felt clean inside and outside. We were advised by the locals from the game that they were known for their Chicken Chipotle and Margaritas. Since we do not drink but wanted to try their Margaritas Robbie helped us through ordering the best Mocktail to help give us the experience. In terms of the food, it was amazing. We were not extremely hungry because we had a heavy meal after the game. We ended up ordering and sharing the Mexican Street Corn, the Shrimp Nachos, and the Chicken Chipotle. Robbie asked if we wanted them to come out together or separate (he listened when we told him we were coming in based on a recommendation from the previous night). We asked for all the food at once and I remember us commenting on the fact that the food was ready so fast. Everything was amazing and full of flavor. Initially I was concerned about ordering Street Corn so I was thrilled when it arrived at the table in a bowl vice on the cob. We could not have asked for a better combination of food, service, and ambiance. When I am in the area again, I will definitely return to this restaurant. If you are visiting or living in the area you should give it a try you will not be disappointed!
